A true treat in coffee form. This incredibly unique coffee from Finca El Paraiso in Colombia undergoes a detailed and controlled fermentation process. Cleaned with ozone, anaerobically fermented once with lactic acid bacteria while the coffee is in its’ cherry, the cherry is removed and the seed is again fermented and, and finally thermally shocked by raising and rapidly cooling the fermentation to lock in flavors within the seed.
The results? Baking spices, cinnamon, cardamon, pistachio, honey, vanilla cream with a prolonged finish. Reminds me a lot of a cinnamon roll!
